Catharine Lulling’s Lemon Squares

Catharine Lulling is a character from my series of mysteries with a metaphysical twist! She is a psychic empath that helps solve crimes…and loves to cook and bake. Here is one of my family recipes that Catharine has whipped up in my books! This recipe is not vegan.

1 Cup Flour
1/4 Cup Powdered Sugar
1/2 Cup (one stick) Butter, room temperature
1/8 tsp Salt

Combine all and stir until well blended (I mix with my hands). Scrape mixture into a 9 inch square pan. Press down with fingers until even. Bake at 350 degrees for 18 minutes.

TOP LAYER (Make while bottom is baking):
1 CUP Granulated Sugar
3 TB fresh lemon juice
2 large eggs
1/2 tsp baking powder
1/8 tsp salt

Beat eggs slightly and add other ingredients until well blended and thick.  When bottom layer is done, pour the topping over the base and spread evenly with a spatula. Return to the oven (same temperature, 350) and bake for another 20 minutes.  Cool and dust with powdered sugar sifted through  strainer.

NOTE: I always use a little less sugar then requested.  Makes the lemon flavor pop!
