I have been trying to avoid processed foods and mixes, as they have additives, preservatives and ingredients that I don’t want to put in my body. If you make it yourself from scratch, you control what ingredients go in and how much. (I usually use less salt/sugar than a recipe recommends or replace the sugar with agave syrup, which is better for you.)
I know the phrase “from scratch” is a scary one. You think preparation will take a LOOOOONG time or the recipe will contain ingredients that you don’t have in the house. Well, if you have baking staples, you can make pancakes. Quickly and easily!
I modified a recipe from AllRecipes.com and created this YUMMY pancake mix. It may take 1-2 minutes more than using Bisquick, and it’s better for you! P.S. this recipe is listed with dairy, with vegan substitutions.
1 1/2 C flour
3 1/2 tsp baking powder
1 tsp salt
1 TB sugar – or agave syrup, same amt.
1 1/4 C lowfat milk (for vegan use Almond milk)
1 egg (or vegan egg substitute)
3 TB butter, melted (for vegan use Earth Balance)
1/2 tsp cinnamon
1. Mix flour, baking powder salt, cinnamon & sugar in one bowl.
2. Mix milk, egg, and melted butter in separate bowl.
3. Slowly add wet to dry ingredients, stirring so you have no lumps.
Heat a skillet on medium. Drop batter onto skillet and flip when you see the bubbles!
