Easy Vegan Cinnamon Cookies

Ingredients:
1 Cup margarine or Earth Balance, softened
1/2 Cup sugar
1 teaspoon vanilla extract
3 Cups all-purpose flour
2 teaspoon ground cinnamon
1 1/2 Cups powdered sugar

Directions:
1. Beat together margarine, sugar and vanilla. Stir in flour and 1 teaspoon of the cinnamon to make a soft dough. Cover and refrigerate for 1 hour.

2. Grease 2 baking sheets and preheat oven to 350.  Form mixture into 1-inch balls and place on baking sheets. Press down with palm so they are just about 1/4″ thick.

3. Bake 15-17 minutes or until lightly browned on bottom. Remove from oven and cool for a few minutes. Mix together powdered sugar and 1 tsp cinnamon; dip the tops of the warm cookies in the cinnamon powder.
