My daughter introduced me to this quick and light breakfast muffin. Despite how it looks, it tastes really yummy and is filling and nutritious! Prep time: 5 minutes. Cook time: 2 minutes. You can eliminate the egg or substitute it with 1TB applesauce for vegan.
1/2 cup quick oatmeal
1 egg (or a 1/4 C egg white)
1/2 tsp baking powder
1 packet Stevia (or sugar to taste)
1/2 tsp cinnamon
1 tsp vanilla extract
optional: add blueberries or raspberries
Blend all with hand mixer or mini-food processor. Spoon into a microwave safe mug.
Microwave on high for 1 minute 30-40 seconds.
